Quick Beef Stroganoff

Ingredients:

  • 1 1/2 lb 96% extra-lean ground beef
  • 1 Tablespoon reduced-fat margarine
  • 3/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 Tablespoon Worcestershire sauce
  • 1 6-oz can tomato paste
  • 1 10-oz can beef broth
  • 1 cup fat-free (skim) evaporated milk

Directions:

  1. Brown the ground beef in a heavy skillet. Drain off the fat, remove the beef from the skillet, and set aside. Add the margarine and saute the onion and bell pepper until tender.
  2. Add the remaining ingredients slowly, stirring to blend. Return beef to skillet; stir to coat well. Cover and cook over low heat for 30 minutes. Serve over hot noodles or fluffy rice.
